A cooking class cum dining experience. Highly recommended. It is a very authentic, rich experience. The theme for the night was pasta and began with a delicious Pennette al sugo di salsiccia di Toto. A seafood entrée of Bianco e nero di Carbonara di Mare (Black and white seafood carbonara) was next. It was a luxurious seafood pasta which featured squid ink for a beautiful depth of flavour and magnificent colour. The main course was a hearty Rigatoni al ragu bianco, con mandorle e cream (Rigatoni with white meat ragu, almonds and cream). And dessert was a decadent high with a deconstructed cannoli (Cannolo Siciliano un po scomposto). Absolutely scrumptious, the interplay of sweet, sour and texture was exceptional. It was an absolutely beautiful dessert that was equally appealing to the eye.

I have done 3 courses with Sandra and each one was FANTASTIC. I have added to my cooking skills and my recipe base. I love the method of learning and having the Cook right there open for questions was a real experience. The food was amazing and well worth the investment. Do it again ? Hell yes I am booked in for the next round.

These classes conducted by an italian passionate about regional Italian cuisine. Sandra has devised menus from each region of Italy and on the nights I attended she presented each meal in such a way that it was easy to reproduce at home. Not only did we each receive a complete menu on the night, but Sandra emailed another complete menu the next day. Her use of Ricotta was exceptional and explanation of different types, right down to the best places to purchase was fantastic. I tried one of her Ricotta desserts for a dinner party at home (Ricotta cream biscotti crumble and Coffee) and it was so simple after seeing Sandra prepare it. I could recommend these classes to anyone with even a rudimentary knowledge of cooking, right up to a great home cook.

Where else in Melbourne can you have the experience of such an intimate chefs table? The classes are run in the stunning warehouse conversion that is Sandra's home. The beautiful, relaxed atmosphere sets the scene for a night of gastronomic delight. The quality, innovation and fresh approach to lesser known aspects of Italian cuisine has to be experienced to be believed. This truely is a cooking and eating experience like no other!

Sandra ran Test Classes prior to launching her Italian Cookery School and encouraged feedback. Each one I attended was so fabulous I could not think of ways to improve them! From a 3-course meal plus finger food and wine, to the take-away gift afterwards (herbs flown in from home-town in Abruzzo) plus full set of recipes both on the night and emailed promptly the next day, each class is superb. I was inspired to cook her recipes and happily they all have been received very well!! Highly recommend - a great experience!!
